t’is the season for stew

Nothing feels more like fall to me, except maybe a pumpkin spice latte from Starbucks, than some stick-to-you-ribs comfort food. I thought I’d try something new, and I have to say, I’m pretty happy with how it turned out. Let’s call it stew #1.

You’ll need:

  • sausage seasoned to your liking
  • 2 yellow, orange or red bell-peppers
  • 3 cloves of garlic
  • 2 cups of chicken or vegetable stock
  • 2 carrots
  • 1 can of garbanzo or pinto beans
  • a medium-sized bundle of kale
  • 1 lemon

You start by cutting your sausage into nice-sized chunks, no need to be fancy this is comfort food after-all, and then place them into a pot. While they start to turn a nice brown, cut your three cloves of garlic and toss those in as well. Give it a good stir and then let it be. Move on to your bell-peppers and carrots. Slice them into bite-sized pieces then add them to your sausage and garlic mix. Once everything starts to look browned and cooked through measure out your two cups of stock and put it in the pot with a can of beans. Give everything a good stir together then reduce to simmer. Roughly chop the kale and stir it in with the juice from one lemon. Let everything simmer together, stirring occasionally.
