Sherbet Cake

What to do when you’re faced with a last minute dinner party invite? Sometimes you just don’t want to be *that guy* who shows up with the $10 bullet if cheap but delicious merlot. right? ..just me? ok.

well my friend Hannah called me up the other day inviting me over for a simple pasta dinner- She had been bitten by the housewife bug and wanted to share her latest creation with a few friends. I had already left my house for a day of auditions so i ventured into Whole Foods on my way to her house to see what i could create.

Upon entering i saw two things on sale– Angel Food Cake and Raspberries— so of course I wanted to create something using those two items.  Here’s what i came up with

Sherbet Cake
1 Angel Food Cake
1 Pint Raspberries—or really whatever fruit you want
1 Pint of Sherbert
1 Container of Cool Whip(Classy right?!)
 
 
 
Take the cake out of its packaging and slice it horizontally so you have three pieces. Put the bottom piece on a large place then use the sherbet as if it were icing and make a layer on top of the cake. Place The next layer on top and repeat so you have 2 layers of sherbet and the top back in place. In a small bowl(or in the cool whip container) mash the berries into the whipped topping until incorporated. Use the topping as icing to cover the whole cake. Put the whole plate into the freezer until you’re ready to serve it—
